Well, It's been a while. I have been very busy. My son celebrated his 11th birthday on Valentines day, with a birthday party at CyberZone(laser tag). He had lots of fun. No cooking for me that day,he wanted takeout Pizza, and DQ Ice cream cake. I have made Ice cream cake, actually for my daughters birthday in September. Its an easy recipe, and was a big hit with her friends.
Ice Cream Cake( Kraft Canada Website)
1/2 cup chocolate sundae topping
2 cups thawed cool whip whipped topping, divided
1 pkg. chocolate instant pudding( 4 cup size)
8 chopped/crushed Oreo cookies
12 vanilla ice cream sandwiches
Pour chocolate topping into a bowl with the 1 cup of cool whip. Stir until well blended
Stir in the dry pudding mix, and mix for 2 minutes until well blended. Gently stir in the chopped cookies. Set aside.
Arrange 4 of the ice cream sandwiches, side by side on a large foil sheet,top with half of the whipped topping/choc. mixture. Repeat layers.Top with remaining 4 ice cream sandwiches. Frost top and sides with remaining cool whip.Bring up foil sides. double fold top and ends to loosely seal packet.
Freeze at least 4 hours before serving. Let stand at room temperature for a few minutes before serving. Store leftover dessert in the freezer.
Everyone enjoyed this. Caleb wanted monster trucks on top of his cake, and I am not very good at that, so we went with DQ.! LOL
